The "food diversity new interpretation of Japanese cuisine" that does not use any meat or seafood ingredients, umami seasonings, refined sugar, or the five pungent vegetables (chives, garlic, shallots, chives, green onions) in its recipes was proposed and supervised by Mr. Kusumoto of "Sai-do" in Jiyugaoka, and desserts were supervised by Mr. Tsujiguchi, a pastry chef who has won numerous awards at international confectionery competitions.
