The flour is a blend of organic wheat and the best flour for each season from north to south across Japan, and the noodles are made in-house at the store every day. The soup stock is a seasonal blend of Hokkaido-produced natural true kelp and Rishiri kelp, as well as carefully selected domestic bonito flakes and dried sardines. The ingredients are additive-free, and we always aim to be safe and secure, and we take the time and effort to carefully create a highly fragrant soup stock. We used soft water with a mellow texture to bring out the flavor of the ingredients to the fullest. Currently, our business hours are shorter than usual.
